How To Make No-Bake Cherry Ripe Balls
If you know anything about me, you know I hate Cherry Ripes!
I love coconut and I love cherries and I tolerate dark chocolate, so the hatred didnβt make much sense to me to be honest.
So one faithful say I decided to see if I really hated Cherry Ripe or if I just hated the fake cherry taste - so I decided to make Cherry Ripe balls with fresh cherry compote!
I followed an online recipe for cherry compote and mixed it with this one for no-bake cherry ripe balls and they came out pretty great! My original video and recipe are both below. Enjoy! π
Ingredients
Cherry Compote
1/2 or 1kg fresh cherries
2 tablespoons granulated sugar
1 teaspoon grated orange zest
1/4 cup orange juice
Pinch of salt
1 teaspoon balsamic vinegar
Cherry Ripe Balls
Desiccated coconut
Skim sweetened condensed milk
High-quality dark chocolate (e.g. Lindt)
Method
Cherry Compote
Remove the pits from the cherries & halve them.
In a medium saucepan, combine the cherries, sugar, orange zest, orange juice, and salt. Bring to a boil over medium-high heat.
Adjust the heat to a simmer and cook, stirring often, until the cherries release their juices and the sugar dissolves.
Remove the pan from the heat and stir in the vinegar. Pour into a glass jar or container and let cool to room temperature.
Cherry Ripe Balls
Cover a baking tray with parchment paper (one that you can fit in your freezer/fridge).
Mix the coconut, sweetened condensed milk, and a bit of cherry compote until combined. Make sure the mixture is not too wet - I would recommend a higher ratio of coconut + condensed milk to keep it from being too wet.
Shape them into little balls with your hands and place them on the baking tray.
Break up the chocolate in a bowl and then gently melt it in the microwave, 30 seconds at a time. Make sure to mix it well after every 30 seconds, until everything is melted.
Dip the Cherry Ripe Balls into the chocolate - you can place them on a rack to let the excess chocolate drip off.
Once sufficiently coated in chocolate, place the Cherry Ripe balls in the fridge (or freezer!) and let them cool for about an hour.
